La Poké Bowl con pollo è un’esplosione di colori, consistenze e nutrienti racchiusi in un’unica ciotola. Questa variante a base di carne bianca del celebre piatto hawaiiano unisce la delicatezza del Petto di Pollo Bio Fileni a una base soffice di riso, arricchita da avocado cremoso, verdure croccanti e un tocco di salsa di soia e semi di sesamo. È la scelta perfetta per un pranzo di lavoro leggero, una cena estiva o per chi desidera un pasto sano e bilanciato senza rinunciare al gusto.
Per preparare due Poké Bowl ricche e colorate, procurarsi i seguenti ingredienti:
300 g di Petto di Pollo Bio Fileni;
160 g di riso Basmati (o riso per sushi);
1 avocado maturo;
100 g di edamame (o piselli freschi);
1 carota grande;
1 cetriolo;
50 g di germogli di soia;
2 cucchiai di salsa di soia (a ridotto contenuto di sodio);
1 cucchiaio di olio di sesamo (o olio extravergine d’oliva);
1 cucchiaio di semi di sesamo bianchi e neri;
sale fino q.b.;
pepe nero macinato fresco q.b;
Seguire questi passaggi per assemblare una ciotola perfetta e ben bilanciata.
Sciacquare il riso sotto acqua corrente e cuocerlo in acqua bollente salata seguendo le istruzioni sulla confezione. Una volta cotto, scolarlo e raffreddarlo con acqua fredda sgranandolo con una forchetta. Lessare gli edamame per circa 5 minuti in acqua bollente, scolarli e metterli da parte.
Tagliare il petto di pollo Bio Fileni a cubetti regolari. Scaldare una padella antiaderente con un filo d’olio, aggiungere il pollo e farlo dorare a fuoco vivace per 6-8 minuti. A fine cottura, sfumare con un cucchiaio di salsa di soia, regolare di pepe e lasciar intiepidire.
Sbucciare l’avocado e tagliarlo a fettine o a cubetti. Tagliare la carota a julienne e il cetriolo a rondelle sottili o a cubetti. Sciacquare e asciugare i germogli di soia.
Disporre una base di riso sul fondo delle ciotole. Organizzare gli ingredienti a raggiera sopra il riso: i cubetti di pollo Fileni, l’avocado, la carota, il cetriolo, gli edamame e i germogli di soia. Condire con l’olio di sesamo, la salsa di soia rimasta e una spolverata di semi di sesamo toostati prima di servire.
Il Poké (pronunciato *poh-kay*) nasce originariamente nelle isole Hawaii come spuntino povero e veloce ideato dai pescatori nativi. La parola *poke* nel dialetto locale significa letteralmente ‘tagliare a pezzi’ o ‘affettare’, e si riferiva all’abitudine di scartare le parti piccole del pescato del giorno, condirle con sale marino, alghe e noci Kukui tostate e consumarle direttamente sulle imbarcazioni.
Nel corso del XIX e XX secolo, con l’arrivo dei lavoratori cinesi e giapponesi nelle piantagioni di canna da zucchero hawaiiane, la ricetta subì una profonda trasformazione: vennero introdotti la salsa di soia, l’olio di sesamo e il riso al vapore come base, avvicinando il piatto alla sensibilità orientale. Negli anni 2010, il Poké ha conquistato la California e da lì si è diffuso a livello globale come simbolo della cucina sana, personalizzabile e colorata.

Fileni's organic farms are surrounded by greenery. To prevent them from abruptly breaking up the natural landscape around them, we have surrounded the sheds with plants and trees, among which the animals are free to roam, choosing when to live outdoors and when to shelter from the sun or the weather inside the structures.
These are equipped with the latest technology, so that they can reduce dust and odours without affecting the everyday life of the neighbouring population. In many cases, they are also able to produce electricity in a clean and efficient manner thanks to the use of photovoltaic panels.
Wheat, maize, soya, field beans and protein peas are the raw materials that make up the organic feed produced in our feed mill in Jesi, in the province of Ancona. A mix of legumes and cereals, organically grown, form the basis of a healthy, balanced diet for all chickens and turkeys in our organic supply chain.
But our commitment to agriculture goes further, in the belief that every virtuous action pays off. This is why we are participating on an experimental basis - as co-founders - in the ARCA project (Agricoltura per la Rigenerazione Controllata dell'Ambiente - Agriculture for the Controlled Regeneration of the Environment), conceived by Bruno Garbini with Giovanni Fileni and Enrico Loccioni, which is concerned with implementing regenerative farming techniques to preserve cultivated land, maintaining its fertility and protecting it from hydrogeological instability.
For the embryo to develop properly, we make sure to cuddle the newly laid eggs. We keep them warm, in the hatchery, for 21 days, three of which in the hatching chamber, constantly monitoring temperature and humidity.

Once laid, the eggs are kept in the hatchery for 21 days, including 3 days in the hatching chamber. In this phase as well, the balance between hygiene, temperature, and humidity is essential to ensure proper embryo development.
Fileni’s conventional farms are mainly located in Central Italy, in the regions of Marche, Veneto, Emilia-Romagna, and Puglia.
Chickens are reared on the ground in state-of-the-art facilities equipped with systems to reduce odors and dust, ensuring no disturbance to nearby communities. Many of our company-owned farms are also equipped with photovoltaic panels for electricity generation.
Feeding the animals in our conventional supply chain properly is the most important thing we can do for their health—and yours.
We ensure they follow a correct and balanced diet made up of cereals, legumes, minerals, and other nutrients. To achieve this, we work with veterinarians who define the variety and proportions, and we produce the feed directly in our own feed mills to ensure they receive only the very best.
Without the breeding sector, our conventional supply chain could not exist. Here, animals are able to reproduce following their natural instinct. For this reason, we devote the utmost attention to these environments, maintaining constant levels of temperature, humidity, and hygiene at all times.
