Per realizzare un Chicken Tikka Masala perfetto e cremoso, occorrono i seguenti ingredienti:

600 g di Petto di Pollo a Bocconcini Fileni;

200 g di yogurt greco (per la marinatura);

1 cucchiaio di succo di limone;

2 spicchi d’aglio tritati;

1 pezzetto di zenzero fresco grattugiato (circa 2 cm);

1 cucchiaino di garam masala;

1 cucchiaino di cumino in polvere;

1 cucchiaino di curcuma in polvere;

1 cucchiaino di paprika dolce (o piccante);

400 g di polpa o passata di pomodoro;

150 ml di panna fresca (o latte di cocco);

1 cipolla dorata tritata finemente;

2 cucchiai di olio extravergine d’oliva (o burro/ghee);

un mazzetto di coriandolo fresco tritato;

sale fino q.b.;

pepe nero macinato fresco q.b;

Come preparare il Chicken Tikka Masala

Seguire questi passaggi per marinare, cuocere e amalgamare al meglio tutti gli ingredienti.

Step 1
La marinatura del pollo

In una ciotola capiente, mescolare lo yogurt greco con il succo di limone, l’aglio tritato, metà dello zenzero grattugiato, un pizzico di sale e metà delle spezie (garam masala, cumino, curcuma, paprika). Unire i bocconcini di pollo Fileni, amalgamare bene, coprire con pellicola e lasciar marinare in frigorifero per almeno 2 ore (o tutta la notte).

Step 2
La cottura del pollo (Tikka)

Scaldare una padella antiaderente o una piastra a fuoco vivace con un filo d’olio. Cuocere i bocconcini di pollo marinati per 6-8 minuti, girandoli spesso finché non saranno dorati e leggermente abbrustoliti in superficie. Toglierli dalla padella e tenerli da parte.

Step 3
La preparazione della salsa (Masala)

Nella stessa padella, aggiungere un altro filo d’olio (o burro) e far soffriggere la cipolla tritata fino a renderla dorata. Unire lo zenzero rimasto e le spezie avanzate, facendo tostare per un minuto. Versare la polpa di pomodoro, regolare di sale e lasciar sobbollire a fuoco dolce per 10-12 minuti.

Step 4
Unione e finitura

Versare la panna fresca (o latte di cocco) nella salsa e mescolare fino a ottenere un colore arancione avvolgente. Aggiungere i bocconcini di pollo tenuti da parte e lasciar insaporire a fuoco lento per 5 minuti. Completare con abbondante coriandolo fresco tritato e servire ben caldo con riso Basmati.

La storia del Chicken Tikka Masala rappresenta uno degli esempi più affascinanti e curiosi di contaminazione culinaria tra la cultura britannica e quella dell’Asia meridionale, tanto da essere stato definito dall’ex ministro degli esteri britannico Robin Cook ‘un vero piatto nazionale britannico’.

Mentre il Chicken Tikka (bocconcini di pollo spezzettati e marinati) vanta radici antiche nella tradizione Moghul e della cottura nel forno d’argilla tandoor nel subcontinente indiano, la versione affogata nella salsa cremosa (“Masala”) è una creazione molto più recente. La leggenda più accreditata colloca la sua nascita negli anni ’70 a Glasgow, in Scozia, presso il ristorante indiano “Shish Mahal”. Si narra che un cliente britannico si fosse lamentato del fatto che il suo pollo tikka fosse ‘troppo asciutto’; lo chef di origini pakistane Ali Ahmed Aslam decise così di improvvisare una salsa rapida unendo una lattina di zuppa di pomodoro condita, panna e spezie versandola sopra la carne.

Il successo fu immediato e travolgente, trasformando la ricetta in un fenomeno globale. Wheat, maize, soya, field beans and protein peas are the raw materials that make up the organic feed produced in our feed mill in Jesi, in the province of Ancona. A mix of legumes and cereals, organically grown, form the basis of a healthy, balanced diet for all chickens and turkeys in our organic supply chain.

But our commitment to agriculture goes further, in the belief that every virtuous action pays off. This is why we are participating on an experimental basis - as co-founders - in the ARCA project (Agricoltura per la Rigenerazione Controllata dell'Ambiente - Agriculture for the Controlled Regeneration of the Environment), conceived by Bruno Garbini with Giovanni Fileni and Enrico Loccioni, which is concerned with implementing regenerative farming techniques to preserve cultivated land, maintaining its fertility and protecting it from hydrogeological instability.

The first step into the Fileni world.

For the embryo to develop properly, we make sure to cuddle the newly laid eggs. We keep them warm, in the hatchery, for 21 days, three of which in the hatching chamber, constantly monitoring temperature and humidity.

Nature takes care of it.

“Well begun is half done,” as the saying goes. The first step, common to all supply chains, is of fundamental importance. We let nature guide the animals’ instincts. We do not force anything; we simply ensure they are provided with the ideal environment for reproduction, maintaining constant levels of temperature, humidity, and hygiene.

Out of the shell.

Once laid, the eggs are kept in the hatchery for 21 days, including 3 days in the hatching chamber. In this phase as well, the balance between hygiene, temperature, and humidity is essential to ensure proper embryo development.

Fileni’s conventional farms are mainly located in Central Italy, in the regions of Marche, Veneto, Emilia-Romagna, and Puglia.

Chickens are reared on the ground in state-of-the-art facilities equipped with systems to reduce odors and dust, ensuring no disturbance to nearby communities. Many of our company-owned farms are also equipped with photovoltaic panels for electricity generation.

Good, wholesome feed.

Feeding the animals in our conventional supply chain properly is the most important thing we can do for their health—and yours.

We ensure they follow a correct and balanced diet made up of cereals, legumes, minerals, and other nutrients. To achieve this, we work with veterinarians who define the variety and proportions, and we produce the feed directly in our own feed mills to ensure they receive only the very best.

Without the breeding sector, our conventional supply chain could not exist. Here, animals are able to reproduce following their natural instinct. For this reason, we devote the utmost attention to these environments, maintaining constant levels of temperature, humidity, and hygiene at all times.
